I noticed that on mine too. I gently pick at it to manually remove any flakes that might otherwise wind up in the tank. But there is the filter on the petcock to catch such debris. And you may have the hidden filter still in place. I pulled the hidden filter and installed an inline filter. I'm not too worried about the peeling... it's not excessive on my bike anyway. But it's there and it does tend to raise an eyebrow.

I had a Mustang once that every so often, it would stall out. After checking everything under the hood, I pulled the tank and inside the tank was a factory part label from the pick-up (I guess). It would get sucked to the pick-up and wrap its self around it blocking the gas. After it stalled and the label fell off the pick-up, it would start up again. Just make a mental note so if your bike has/gets the same symptoms from those paint chips,or next time you have your tank off drain it take the petcock off and clean the tank!

+ 1 but I too have an good inline and cleanable filter that will pick up any flecks so I'm not too concerned. Given I noticed the problem 2 yeas ago though, I'm yet to pick up any paint debris in the filter so if you already have an inline filter, I wouldn't give it much thought unless the problem was staring at you to take further action as suggested already.

Welcome to the club.

I do nothing about it other than routine fuel system maintenance.
