This is another of our "Convertible" ales used to convert the mass swill drinkers to real beer. A very nice red, similar in flavor to an amber ale.

Boil

Procedure:
Mash in at 152° F.
Mash for 75 minutes.
Sparge for 60 minutes.
Full boil for 60 minutes.
Ferment at 65° F for 13 days.
No secondary used.
Keg and chill for 48 hours before drinking.

Comments:
This was the 4th in our convertible series of ales.
We also have used the same yeast for 5, ten gallon batches to date. This seems to be working fine so far.
This beer came out very complex due to the grain bill.
We did drink this to quick as well, we should have let it age for a few weeks at least.
As we drank the last few glasses the beer was getting much better.
Note to self, brew bigger batches so I won't run out so much.
