1/2 cup slurry Wyeast 1056 Chico Ale 1-2-99

Boil
1 tsp Irish Moss 15 Minutes
1 1/4 cup Paine's Extra Light DME Boil w/ 2 cups water for priming

Procedure:
3.5 Gallons of 170° water for mash, temp = 150° F
Rest at 150° F for 90 minutes.
Test for conversion with iodine
Sparge with 5 gallons 170°' F water to yield 6 gallons wort.
Boil for 60 minutes
Hops additions at 60, 45 and 15 minutes.
Chiller and Irish Moss in with 15 minutes left to boil.
Chill, aerate well and pitch yeast.
Ferment in 6.5 gallon glass carboy for 7 days at 70° F
Rack to 5 gallon glass secondary for 7 days at 70° F
Prime with DME and bottle - yield 38 bottles @ 16oz.
Condition for 2 weeks before drinking.
Comments:
This beer had a very strong sulphury smell to it while fermenting.
After the beer was in the bottles for 2 months at 68° F it was fantastic!!
I took some for samples to the Empire Brewing Contest on May 18, 1999 and was told that I should have entered it in the contest because it was an excellent Porter.
Next year I will make it and enter it for sure.
The beer is very dark and malty, just not enough body for a Stout as planned.
There is also a very distinct chocolate flavor to it that I enjoyed very much.
You could almost stand on the head, it was dark, thick and firm. It stayed all the way to the bottom of the glass.
As I said before, I will be making this again, and again, and again....Very yummy, almost chocolate beer.
