Boil
1 1/2 tsp Irish Moss 15 Minutes

Procedure:
2.25 Gallons 130 water to mash, result = 122° F mash
Mash pH = 5.1
Rest for 30 minutes at 122° F
Add 1.125 Gallons boiling water to mash to rasie temp to 150° F
Rest for 2 hours at 150° F
Test for conversion with iodine
Add about 1 gallon boiling water to raise mash temp to 168 for 15 minutes
Sparge with 5 gallons 170° F water to get 6 gallons wort.
Boil for 60 minutes.
Hops additions at 45, 15, and at flameout.
Chiller and Irish Moss in with 15 minutes left in boil.
Chill to 60° F Aerate well, siphon into glass 6.5 gallon carboy, pitch yeast
Place carboy into muck bucket, half filled with cold water
Place (2) 2 liter frozen bottles of water into bucket with water - result temp = 52° F
Primary for 7 days, rack to secondary 5 gallon glass carboy.
Continue fermenting at 50° F for 30 days
Remove carboy from water bath, rack into SS keg, add dry hops and leave at 64°F for 5 days
Into fridge at 40° F for 2 months lagering

Comments:
I didn't have any real Lager malt so I had to use what was available.
The beer came out very malty with a nice yellow color and very clear.
The only problem is that the beer comes out very foamy with a very thick head.
It is a little overcarbonated, I never had to add any gas, but very tasty and malty.
I racked off the primary too early this time but will avoid that next lager.
Overall, a very drinkable and smooth beer.
