Approx 2 quarts (US) slurry Wyeast 1968 London Special 2/25/00


Procedure:
Mash in at 153°F for 90 minutes
Sparge with 190°F water for 60 minutes.
Irish moss with 15 minutes left to boil.
Boil for 60 minutes
Chill
Aerate with pure O2 for 60 seconds
Pitch yeast at 70°F
Ferment in glass primary for 5 days at 68°F
Secondary for 8 days at 68°F
Keg with 2.4 volumes CO2

Comments:
We were invaded by a yellow spotted knewt the night we brewed, hence the name.
This beer was one of the first in our line of 'Convertable" ales we are brewing. We plan on converting megaswill drinkers with this and the following batches.
It has a nice golden color with a light to medium body.
Very nice hops/malt balance. Not so bitter as to turn off the Budmilloors drinkers.
The First wort hopping adds a very favorable flavor in my opinion.
Very well received by all who were lucky enough to induldge.
All in all, a great brew.
