Boil
1 tsp Irish Moss 15 Minutes

Procedure:
Add 2.5 gallons 170° F water to mash, temp = 150° F
Mash pH = 5.2
Hold at 150° F for 60 minutes
Test for conversion with iodine
Raise temp of mash to 168° F for 15 minutes.
Sparge with 5 gallons of 170° F water to yield 6 gallons of wort.
Boil for 75 minutes
Hops additions at 60, 45, 15 and 5 minutes.
Chiller and Irish Moss in with 15 minutes left to boil.
Chilled to 78° F, aerate well and pitch yeast.
Primary in 6.5 gallon glass carboy for 8 days at 70° F.
Secondary in 5 gallon glass carboy for 10 days at 65° F.
Transfer to SS keg, add dry hops in a vodka soaked hops bag to keg.
Seal keg with 35 psi.
Condition in fridge for 5 days at 38° F.
Force carbonate with 2.5 volumes CO2.

Comments:
This is a hophead's delight, very nice hops flavor and aroma.
It had a very thick, firm head that stayed with you all the way down the glass, nice lace.
Nice mouthfeel, golden color and slight fruity flavor from the cascade hops.
This is a good example of an American Pale Ale, similar to Sierra Nevada.
