AI removal doesn't require any retuning, but you might want to redo the idle mixture anyway because it is set very lean from the factory.
The idle screws are accessable at the bottom of the carbs near the carb heater connections. Older ones have an anti tamper plug that has to be removed. Starting sometime in '04, they deleted this plug and changed to a screw that requires a special D shaped tool that you can get here.

The rest of the emissions package has no noticable effect on performance, and it's removal can get you a tampering ticket. There is a slight advantage to leaving it in place, you get to burn the gas fumes that would otherwise escape into the atmosphere, giving your fuel economy a slight boost.
