I would say the left side is in close. Should not be a big effort. I would suggest loosening the left side muffler clamp. If the rear hanger is like the OEM set up it is on a rubber bush so no need for any tools there. Then grasp the left muffler from the rear. Rotate it out, like clockwise a bit. Make both sides look similar and tighten the previously loosened clamp. Of course you could adjust either side to find the middle point.

Looks ok to me, don't forget the engine is offset to the right hand side

I would imagine it's off centre towards the right to allow the front sprocket to line up with the rear sprocket.

I think the motor was offset so that the chain could clear the tyre which is wider than the bonneville rear tyre...which the engine was originally designed for.

I think the sole purpose of the offset is to make the left side carb a PITA to work on.
