I've searched both the site and the web and can't seem to find the answer to this question even though I know I've seen it on here before. Sorry if I'm just blind.

I have a 2006 America with stock suspension (for now) I can easily find the wet weight of the bike, but what is the rated capacity with rider, passenger, accessories, and gear? In other words: either total maximum weight or carrying capacity?

Whatever the max weight load of the front and rear tires combined, plus a safety factor percentage added in for Triumphs lawyers would be a good clue. Rear shocks can be ordered with light to heavy spring rates from the better brands, as well as front springs with different rates of compression. Many here have found a 50-50 mix of 10w and 15w fork oil with progressive springs to haul us lard azzes around about right. I prefer inertia valving in my forks with stock springs and I'm no lightweight. It's all about what works for you and what kind of money you want to spend to get there.
