Any ideas on a mechanical or electronic (Like the Rocket III's) gauge to replace the oil fill plug?

You haven't taken the filler cap off have you? There's very little space below it, ceptainly not enough to get into the sump. If it's oil temp you're after it's simple enough to fit the sensor at one end of the oil cooler. If it's pressure you're better off using the oil line that runs up the back of the cylinders. In either case you should be able to use an extra banjo with the sensor mounted in it by replacing the existing bolt with a longer one intended for dual banjos (no, not duelling banjos).

The biggest drama you'll find is locating a solid, reliable, weather and vibration-proof gauge and somewhere to mount it where you can spot it easilly while riding. Preferably you want a liquid filled gauge to reduce inacuracies due to vibrations. I'd be checking out parts suppliers for HD's, since I'm told they often have issues with oil pressure at low revs in hot environments.

For what it's worth I'd suggest the pressure gauge'd be more useful than the temp one since you'll be able to watch the pressure decrease as it heats up, AND it'll warn you of problems that aren't heat-related.
