Our carbs are tuned and regulated by throttle position, never RPM. So, you need an assessment of off idle, 1/4 Throttle, 1/2 Thrtl. 3/4 Thrtl. and full wide open. Also, you will prob. need to use 4th gear, but at full Wide Open, if you reduce to 7/8ths Thrtl. Pos. does the Rpm gain, stay the same or slow down. I personally have had the best tune with Thruxton needles w/no shims, although others find happiness with TBS, stock, stock with shims, every bike seems to be a rule onto itself to a limited degree. It is also advised to make changes one at a time, so you can get a better feel if you going in the right or wrong direction. Bottom line, If an ignorant old fart like me can tune a CVK from just reading the input of other members on here, I'm sure you can too. Oh and consider investing in a carb. sync. tool, the results are definitely worth it.
