Because the stock regulator isn't as efficient at charging the battery as a MOSFET regulator and the wiring kit straight lines (shortens) the connections to the battery (which runs a longer route through the stock loom) and uses heavier gauge wire. All of which give greater charge to the battery and more amps to the system. You can get a significant improvement just straight lining the wiring from the stock regulator to the battery with heavier gauge wire and better connectors (don't forget a 30amp fuse).
