I hope the car you rented is diesel probably is much cheaper to run.
Use the gas pedal liberally the speed limit on the Autostrada is only a suggestion and there will always be someone going faster they didn't build those cars to just look pretty. Back roads are still the best.
More sights, Sienna, San Gimignano, Viterbo where the warrior popes used to hide out back when they had real armies. Natural Park of Maremma near Grossetto if you need a break. Any town anywhere in Italy you will find something that makes you stop and take a look. Maybe get an extra SD card for your camera you can always edit later.
