If you have the time, go for Nashville! Two day ride to Dahlonega. First day is a slab hell day of 564 miles. Puts you in the Nashville where you can do what it is that intrigues you there. Then the next day when you are hating alcohol, you roll a simple 250 miles to Dahlonega. Better yet, make this a three day ride. Go off slab, stopping 200 miles from Nashville. That gives you an early morning ride into Nashville where you can check in then check out the city. Planning now will get you tickets to what ever venue you want. Staying outside Nashville on your way down the first night keeps the hotel $$ low and allows you to ride into the city after rush hour morning traffic (or rush hour evening traffic).
This is the route I would contemplate riding (or at least a route along this order) to Lexington. Straight lines fall by the way side in favor of twisty sweepy choices as suggested by http://www.motorcycleroads.us/index.html.
Whatever route you decide on, take your time and enjoy the ride!
