Agree, safer routes for larger groups as there are always riders in big group rides who may not be comfortable in highly skilled areas . You guys familiar with the area could draw up some more difficult routes as as options for smaller groups looking to do additional exploring.
+1 on safety for sure....although I enjoy a good challenging ride with lots of twisties, I think routes that offer mix of intermedite to challenging would fit best. Ya know any road can be "unsafe" if ya don't pay attention!
