Hey cider brewers, try making some cyser it is even better.
Take a gallon of fresh apple juice, add 2 pounds of local fresh honey. Toss in some dry champaign yeast. Ferment it for 3 months at 70ºF. Transfer to another jug and enjoy. It is fantastic that way. The honey boosts the ABV up to about 20% and it goes down like nectar. Takes a little longer as honey ferments a lot slower then the other sugars but the flavor is to die for.
Or just add 2 lbs honey to a gallon of water and that makes it mead. Follow same directions as above. I much prefer it with the apple juice though.
be sure to keep the fermentation temp around 65ºF to a max of 70ºF though.
The nice thing about brewing anything with honey is that it will keep extremely long times. I have some meads that are over 15 years old and just fine. They have actually found mead in ancient Egyption tombs that are still good after a thousand years. Honey is the only thing known that does not go bad or mold.
