Interesting you should bring this up right about now. I just pulled a bottle of wine from a rack o' Chardonnay/Torrontes I made up back in May. Some of the guys from this site had a chance to sample AND favour it! Only 8 bottles left and man is it getting good. Torrontes is a white Argentinian grape variety that blends so well with a Chardonnay, or so I found out!
Time to start another batch or two or three!

Asheville was just named 'Beer City USA' for the third consecutive year. I can't even make it through all the local microbrews.

I use to make wine; water melon, muscadine, cherry, and sometimes white grape. I don't have time for it anymore.

About all I drink; downed a liter of cream ale watching the Raiders implode yesterday, with a batch of Irish Red Ale that should be drinkable by Halloween, but better by Thanksgiving.

I've got an anti-homebrew kit. I can take a beverage that's got nasty poisonous alcohol in it and turn it into nice safe urine The best bit is that it's portable, so I can do this trick anywhere, preferably in the pub It's a tough job, but someones got to do it

Hey cider brewers, try making some cyser it is even better. Take a gallon of fresh apple juice, add 2 pounds of local fresh honey. Toss in some dry champaign yeast. Ferment it for 3 months at 70ĀŗF. Transfer to another jug and enjoy. It is fantastic that way. The honey boosts the ABV up to about 20% and it goes down like nectar. Takes a little longer as honey ferments a lot slower then the other sugars but the flavor is to die for. Or just add 2 lbs honey to a gallon of water and that makes it mead. Follow same directions as above. I much prefer it with the apple juice though. be sure to keep the fermentation temp around 65ĀŗF to a max of 70ĀŗF though. The nice thing about brewing anything with honey is that it will keep extremely long times. I have some meads that are over 15 years old and just fine. They have actually found mead in ancient Egyption tombs that are still good after a thousand years. Honey is the only thing known that does not go bad or mold.

I don't; but my son has made some mead, about 18% alcohol (really tasty, almost like a dry white wine) and he has some holiday (spiced) cyser brewing now that should be ready for Thanksgiving.

Actually pretty good! I think you have to be even better on with the timing than the regular beer kit...and it helps to let it age (cold-lager) after it's "finished". They have some various flavors and recipes. I didn't like the cherry that much, but the regular apple and the raspberry were pretty good. I make the comment about aging, cause I made a batch around Christmas time last year, and went through half the batch; half of them were okay and half weren't very good. I didn't finish drinking that batch until the end of August when I came home from Iraq for R&R, and half of them were okay and the other half were damn good!

That's another thing you could talk to Marty (well, probably Nanci) about. When I was there this summer Nanci filled me up with her homemade wine on several occasions. Vino supreme-o!!
