It's a tad more than just water, although that's part of it for sure. It turns out coffee goes rancid very quickly and most commercial brands (Maxwell House, Folgers, Nabob) are rancid right out of the can. It's at the point now where I can't bear to smell such coffee let alone drink it... but then again, I'm a coffee snob.
