Welcome from a "Yankee eejit". Removing the AI is easy to do and will also make it far easier to access the spark plugs in the future. And if you are talented (like me), you'll nick your finger and bleed all over the top of the engine. I guess it was my bonding moment or a sacrificial offering to the Triumph Gods. 
Definitely remove the snorkel at the air inlet. Consider putting in a Polaris Bellmouth to help air flow in. Again, another simple thing to do that will allow your engine to breathe more easily, hence the need to change your jets to get more fuel to the engine.
You have 2 carburetors so you have 2 jets (main & pilot) per carb. Since it sounds like they've never been adjusted, you will most likely have to plan on pulling the carbs to do this. There is a link around here with some good instructions/pics on how to pull the carbs. Some people may you can change out the jets without pulling the carbs, but if I'd suggest you pull them the first time so you know what to find inside. While at it, replace the carb caps with SS screws. The stock ones are some soft material that tends to deform very easily.
