Ireland it great and Dublin is a lot of fun. A great walking city. Be prepared to drink early and often.
We found eating in pubs is the way to go. Friendly, inexpensive and lots of good food. Plus you'll be in a bar!
If you stay in Dublin, you won't run out of things to do. It all depends how much time you have.
Just my 2 cents, they can keep the Cliffs of Moher. It was beautiful, but a huge tourist destination crawling with people. What a shame.
As far as riding in Ireland, if you've never driven there you might want to give that another thought. The roads in Ireland will be quite a bit different that what you're used to in AZ.
