It's been done, member Tommy on here has a beautiful bike with a right side jockey shift. Don't know how he did it, and I don't have pics of it, but maybe FriarJohn has some saved in his cool bikes link. If you plan on a foot clutch, no reason you couldn't fab one up for the left side shift.
