You'd still have a foot shift and a foot rear brake. As far as throttling on while braking, I don't think I've ever had a need to do that. I have never gotten in the habit of blipping the throttle while down-shifting.
Personally I'd only consider this for a show bike, which it looks like that's mostly what that shop does.
