Smooth.
The dimpled type are for bikes that have wiring that sits in the dimple on the underside of the bar.

You can use either one though, you won't really notice the dimples. In fact, it may make things easier if you plan to run your wires through the handlebars.

I plan to run the wire in the bar...what do you mean by make things easier...I would think the dimple would mean less space on the inside of the bar

The dimples are only where the wires would enter the bars under the control fittings - so there is still full internal diameter where the wires would run inside.

So that is where you would drill the bar,ie, in the dimple...does the dimple extend beyond the control?...I was thinking the dimpling would be along the bar where you could attach the wires to the bar....So my question now is what has everyone else used ?

If you want to hide the wires in the bars use bars with no dimple. If you want to leave them the way they are you can use either one.

Check out Sandmans's website. He's done a great job explaining the process
