Have you any thought of removing the windshields and refurbishing the seat areas? Long time ago saw a pre-yute, with a busted leg, rewiring his '51 chevy pickup. Layed the harness out, opened it up, and reworked one wire at a time. Had lots of time.
Gosh things were simple then. oops...geezer moment!
Your restore brings back memories: Pushing lawnmowers, working a sand blaster, farting round with paint guns just to purchase all new rubber seals, etc. Upholstery? hahaha. More like seat covers.
