Yessir. Takes a lot of calories just for sustenance if you work in the lumber industry.

From what the stats say. We non Lumberjack types have a significant instance of obesity. we probly should keep flapjacks on the backburner only for special occasions.

But ya know I watched History channel episodes of "Axe Men"

and some of those boys were decidedly chubby!

Well my secret to pancakes starts in my driveway. Where well before riding season, there is "maple madness month".
I don't know why anyone would sully a perfectly good breakfast with corn byproducts.
For the pancakes themselves, I usually make them with cornmeal and white wholewheat flour for a hearty long lasting meal.
Oh and whoever it was that mentioned it, make sure your cast iron pan is nice and hot before you ladle on the first bit of batter.

Can anybody explain why the first one or two cakes come off the grill all "funky" looking.

In other words, what kind of oil do you use?

That is the way I like to make them "mix some small pieces of sliced or diced apples and add some cinnamon. If you don't have some fresh apples to cut up get yourself some chunky applesauce and add that to your batter but reduce the water requiement by a little. Add some cinnamon to the applesauce as well. GOOD STUFF!!
