The secret to good deer meat is where it has been living and what it has been feeding on. A deer that has been running up and down mountains and eating bark to survive will not taste as good as a deer that has been living in a farm area feeding on corn, alfalfa, soy beans and the like. The deer I used to hunt lived in an old Xmas tree farm that has over grown and bordered our corn fields. All they did was wake up walk out into our field and eat then back to the pines to bed down. That was really good meat! My favorite and the heart was the best part, cubed and fried with some butter and onions.
