Yep, tried that. Just tried it again and both the volume control and Remove Hardware icons were marked "Always Show".
They don't however. Tried resetting defaults, then changing them again. No luck.

And the 8 devices are 5 external hard drives, 1 external DVD writer, 1 external CD writer, and a "video box".
