Justin, you are on the right path with a large goal ahead of you. I believe Matt went 161.188 with a production Bonneville frame and a turbo charged engine. You can see the set-up up I used in the picture. I did add 42mm Mikuni's. This set up put me at 111.101 mph with marginal Salt conditions.
You will want to loose as much wieght from the bike as you go forward according to your drawing. I ran a 190 rear tire and that will do you fine for the Salt, a 180 would actually be better. Brakes are used very little on the Salt so unless you are going to drag race I would move them down the list. I would suggest finding a small gas tank, a friend offered me an old moto cross tank that held 2 gallons. I used Clubman bars which worked great, I would suggest either finding the short risers or go with clip ons to the forks to help get you as low as possible. Mine also has Ikon rear shocks lowered 1" and preogress springs up front.
