Cross-threaded the pillion seat bolt and stripped the nut on the fender. Feel like an idiot. Any recommendations short of replacing the fender?

See if you can get a die the right metric size and re-thread the fender nut. Work the die slowly coming back out often until it works through correctly.

Drill out the offending area, and go and get a "pop rivet" style of self fastening nut at a hardware store. They make a nut that pop rivets into a blind hole, and then leaves a threaded nut after you pull out the pop rivet.

Run the proper size tap through the nut in the fender, replace the bolt with one slightly longer, and put a nut on it.

+1
(Except I used a stainless steel bolt not chrome.)

I'd be careful if I were you. Fixin' that fender could be even harder than gluin' fins on a T-bird.

When I did it, I took off the rear fender, used a hammer and chisel and knocked the bolt off. Went down to the hardware store, picked up a new one and welded it on. Sprayed some Rustoleum over it to keep the rust down and called it a day.
