Running the motor with the choke on is only a very crude means to achieving an ignitable mixture, and likely will produce gobs of unburned combustion products. You'll contaminate the plugs, chamber and engine oil, and might also damage the pipes (if AI is present) and catalytic converters (if that year has them).
The carbs on these bikes aren't unique. Surely there's a non-Triumph dealer or independent service center who can take care of this for you more quickly?
Anyway, congrats on the bike! Don't let the low price fool you; it's worth much more. Take care of it (i.e. w/regular, professional maintenance) and it should last you for many years.

+1 Any competant cycle mechanic can redo these carbs. Just find a dealer who has some free time. I'm glad we talked ya into it, you're gonna like it! Keep us posted.
