I'm not familiar with the Epcos, but on the Thunderbike pipes you remove the setscrew and the 2 hanger screws to get the baffle out. It may take a bit of twisting and grunting, but they should come out.
Repacking them is buying some packing (Moose) and wrapping it around the baffles. Secure it with wire in several places and reinstall the baffles.
