Looks a lot like we call an "Oxygen Sensor", or on the newer cars, and "Air-Fuel Ratio Sensor" (these have a heating element to enable a exhaust gas read on a cold start compensating for the difference in actual temp vs. normal operating temperature) - it sends data to the Engine Control Unit (ECU), allowing it to switch from richer mix to leaner mix, and back (all happening at thousands of times per second?) - it's all rocket science to me, but all in the interest of lower emissions.
