I'm partial to Wenol and an old cotton sock for a polishing cloth. The ribbed elastic area works to remove grunge and the lower "foot" portion as the polsihing part. Like other polishes, Wenol leaves a nice protective film that sheds water and keeps it nice and shiney for a long time.
As far as sealing your shed, if you'll plastic sheet the floor, cover that with gravel and let it breathe out the top you'll be surprised how well that keeps the ground moisture from condensing on your bike.
