I've never come across scrumpy with an old ham shank in it. In Cornwall, it was traditionally made with a dead rat or mouse in it. These days the rat bit is probably just for the tourists!
I was on a course with a chap from Avonmouth once, who told of such Ham shenanigins... i didn't like the sound of it, so he sent me some for a taste. My fears were confirmed... it was rank!
My father in law always tells of when they used to holiday in Tintagel and the barman would only serve 2x half pints to any customer due to its intoxicating qualities 
Them days though, drink driving wasn't as frowned upon as it is now. I laugh when he tells stories of the 15 pints they all drank... BUT the designated driver could only have 7 or 8... and HAD to have a coffee before the drive home. Ha! a coffee!!!
