I run right around the 170ºF mark. It stays there unless I get stuck in a heavy duty traffic jam, then it goes up to 180-190, but quickly back down as soon as i start moving again.
When Benny was here in Sept we checked his compared to mine, with his super duper turbulated cooler he was running higher than me by a lot, closer to 200 at all times. We swapped his stock cooler back on and it dropped down to the 180 range now. We attribute the cooler running on mine to the big bore and more effecient cylinders. I hear most of the regular Bonnie guys over in Delphi are also running quite a bit hotter as well. Around 190 if I remember correctly. Some in excess of 200 at all times. That just seems too hot to me.
We checked the calibration by sticking the business end of the gauges in a pot of boiling water and they both read right at 210ºF, so they are accurate.
