A simple, rough formula to follow is to measure the increased height + 1/2 of the increased pullback that the new bars will give you. The result will be very nearly the additional cable and brake line that you may need. You may be able to subtract half the distance in width if that happens to be less than your starting point. Just at a glance you're thinking of adding 7" in rise alone so new cables will probably be in order as I don't think you can gain that much extra slack on a stock set.
