Check with some of the bike shops in your area... there may be an upholstery shop that does this. But ask if they have any names of customers, you do want to see their work first.
I don't know about your seat, but don't just go cutting. sometimes there's different densities of foam.
I made the mistake of shaving the seat on my Yamaha FJR... it looked just fine and felt great... for about 10 minutes.
I shaved off the dense foam and left the squoogy stuff... was like sitting on a board!
