My Gerbing jacket with Gerbing thermostat does the same thing. You can see it in the headlight and the volt meter. The hotter the jacket setting, the more noticeable it gets. I was wondering if it was the alternator straining when loaded heavily, but I like your thermostat / hysteresis theory better.
