The only manufacturers I remember giving demo rides out in the parking lot at the CW Intl M/C Show in Long Beach the past 5 years were Buell and KTM. But you never know. There could be other brands doing this at this year's event.
Usually, you simply walk up to where they're conducting this and put your name on a list for the particular model you'd like to demo. They will then assign you a time to be back to their demo area for your ride.
