Since you will be in Orlando, you might want to jump over due east (about an hour or so drive) to the space center. While the tour isn't quite as impressive as it used to be when they let you go into the assembly building, it's still quite fun and you get to see them actually working on stuff that will eventually be shot into space for the space station.
Cheers, Brad

Ditto on what Brad said about Kennedy Space Center or Cape Canaveral. IF you happen to visit and do the bus tour during a launch (even a "plain old" satellite launch!), well, it's worth the time! Seeing the Crawler up close and personal, and doing the IMAX film of the Shuttle launch ain't bad either, as they say!

It's a little crazy, but....
The Richard Petty Driving Experience. About $800 for 18 laps of a Nascar track in a Nextel Cup car. A good 150mph worth. Includes instruction. I know it's not bikes, but if you have the cash, it's probably the wildest ride in Orlando.

Silver Springs is nice. The dealers in Orlando, not much to see with any of them.
Daytona? Ugh.

there is a place over on hwy 192 called old town, ask anybody in orlando and they will know, it is a great place to visit on a sat. nite. they have an old car cruise and small amuzement rides, farris wheel and such, be sure to ride the swing there. then just east of there, still on 192 there is a place where you can rent a small airboat (like the swamprats use) and drive it yourself. International drive has alot going on, you can simulate skydiveing and the believe it or not museum is there along with several other things to do. you might like to take in the Arabian nights dinner show?? there ia a place called City Walk that is part of Universal park that is free and has alot of nightly entertainment?? there is so much to do there its more of a where to start thing hahahahahha run over to Daytona and get to the Triumph dealer (ask Ryan) for a T-shirt hahahahaha Orlando has a lot going!!!!!
ENJOY!!!!! NEWT!!!!!
