All depending on what you plan on doing with your bike.
Riding two-up or touring - get the tall sissy bar w/rack (she'll thank you) windshield and lightbar.
Riding around town or solo - get whatever bling suits your fancy (tachometer, lightbar, various covers, alarm, clutch cover, dust cover...)
I have a tendency to stray away from the reselling on ebay idea. This is YOUR bike...deck it out the way YOU want. Put it on and enjoy it all the way!!
As i mentioned earlier, there's tons of little stuff that will make your bike look nicer and I'm sure you'll rack up the $ 1,200 in no time, but I would stay away from the leather panniers (don't ask me how I know).
