It helps if you already know how/where you're going to ride. Any distance and you'll appreciate the foot boards and luggage rack.
2 up and the tall sissybar will probably be better than the short.
Chrome? You can probably find used stuff on ebay and get it chromed locally for less money (and better quality) than the Triumph factory chrome.
If you do a lot of night riding - you can't beat the lightbar, but there are aftermarket options for that also.

As far as pipes - I don't know how much the TOR's have changed since I bought a set in 03 - but mine got raspy/nasty sounding after a year or so....
The AI is a pollution reducing system - so legally, the dealer is not supposed to remove it. What you do behind closed garage doors is up to you..
Whatever you decide, if any of the parts are replacements - make sure the dealer gives you the originals. You paid for them, after all, and you might get a few bucks for them down the road. When the tinker bug really sinks it's teeth in.....
