I don't have a waffle iron anymore, but that must be close to what i do...i have an ancient 8" cast iron skillet that i cook cornbread in. I have bigger cast iron skillets but that's the one i cook cornbread in. I think the cast iron makes it cook better, probably similar to the waffle iron.
I've been wanting to get another one of those.
