Yeah.... take I-70 over I-80/90.
There's not too much scenic in Neb, Kansas is a teeensy bit better. Last summer I rode from Cleveland,Ohio to Napa Valley, Ca to see my son. Riding thru Nebraska I was REALLY REALLY wishing I had a radio, TV or something! It was very boring on the interstates. The side roads are just as boring, just slower. I took a few of those, too.
I admit, 5 days out, 6 back, 3 three visiting..not much time for sightseeing. If I had the time I'd take any road through Utah (except I-15) to south of I-80, then go east.
Be sure and check Streets and Trips or Google or whatever, there are only so many roads across the mountains.

Where are you going in AR? There's a ton of nice roads there.
