Generally, the idea is to replace the bike with a comparable one, minus deductible.
If they want to total it, ask to see the comparisons that they used (has to be the same bike).
You can usually negotiate from there.
Remember, insurance companies are not in the business of paying claims. They are in the business of collecting premiums.
They will give you a low-ball figure if it's a total.
Be tough and insist that they pay what it is worth.

Been through this with a few cars.
You can usually buy it back from the insurance company for a salvage fee. Again, negotiate. You'll be saving them some hassle.
