You just have to accept it at this point (dont'cha think?). Teach her proper riding technique and safety rules. You can't control her but you CAN mentor her.
My fiancee' is going through the same thing. I'm being as proactive as I can as far as guiding her towards a suitable beginner bike and passing on safe riding techniques. Also I'm doing what I can to ensure she knows that every cager out there will be actively trying to run her over. If she doesn't like being behind the bars, fine.
