More than likely you will pay full MSRP. The dealers don't have much room to play with the price of the bike. Accessories on the other hand are another story.
The stock shocks are good for two up riding.
If you get the '07 America, your wife will be more comfortable, since the pilon pad has more padding than years past.
you may want to go with asome aftermarkey bags instead of teh Triumph bags. The quality of the leather on the Triumph bags is not the highest.
It is kind of tough to give advice on a windscreen since everyone is different and has different preferences.
Definitley get the tach (not sure how anyone rides or drives anything that you have to shift can ride or drive efficiently without a tach, I hate not having one in my car).
