3/16 x 1" It's what I had on hand when the inspiration came upon me. If I were to go buy stock, 1/4 or better yet 5/16 would probably be a better choice.
Can I stand on them? Maybe. Maybe not. Each would have to support 120 lbs. If they flex out, I'll go up a notch or two on the stock. There's plenty of thread on the OEM pillion peg mounting bracket bolts to go with a thicker stock. They only take about an hour to make, less paint cycles. These are kind of like prototypes. I need a few hundred miles to see if this position will work. They may end up being right in the way. Time will tell.
The pillion peg mounting bracket serves as a builder's template. I drilled the upper bracket holes, then aligned the stock to the pillion peg mount bracket with the bolts, and placed a one inch rule across the bottom of the peg mounting bracket, and drew my cut off line at the bottom of the rule. The left over stock's angle of cut is a perfect complementary angle when flipped over for making the weld joint for the horizontal part of the bracket. Easy cheesy.

FWIW, I used Hammerite hammer finish paint. The textured finish eliminates some of the frustrations of spraying with rattle cans.
