With the TPS disconnected I have seen improvements in performance in some areas. But now I can't help but wonder, without it the timing curve is no longer stock. Not necessarily a bad thing, but how much better could it be made? Is their a way to tune the timing curve? Either a tunable box, or a mechanical way to tune it?

The Procom CDI unit is programable. Fast Eddy also sells it. You could also send your CDI unit away to be reprogramed at Triumph Twin Power

IIRC, unhooking the TPS puts it at the default setting which is full advance.

That would make sense given the increase in idle speed after disconnecting it.
