Does anyone know what the big connector/plug under the dash is called and/or where to get one? It's the one connecting to the big bundle of wires coming out from under the tank and splitting into the idiot lights and other stuff...

check the tech vault, first post by Sandman, There is a link for Hitachi connectors.
I dont know if that plug is in there but its a great starting point.
